when showing logo in black and white, does it literally have to be black and white? Or can it be in grayscale?

I should know this, but I don't!

Depends on the usage, a logo for a fax sheet or to create foil blocking and dozens of other uses does have to be one colour (black) on a white/transparent background. A black and white iteration of a logo, say for a newspaper ad or single colour print job can contain tone (although if it is too dark it won't show as different to black in a newspaper).
